DNA Extraction from Ancient Tissue
There are two major questions regarding getting DNA out of museum specimens: 1) what's the best tissue to sample, and 2) what's the best way to get DNA out of that tissue? This protocol describes various methods in great detail.

Extracting Mitochondrial DNA (mtDNA) from Hair
