B-mercaptoethanol - Inhibition of phenolic compounds (Sep/08/2006 )

Hi,

I need a reference paper for the statement that 2-mercaptoethanol can inhibit phenolic compounds present in the green leaves. Before posting this here, I did search on the net but couldn't find any references beside the book in which it was casually mentioned.

hi,

2-ME doesn't inhibit phenolic compounds. it does, however, inhibit polyphenol oxidase (PPO) by reducing the disulfide linkages present in the protein, thereby altering its structure, and presumably its activity. DTT will also work for this. PPO is responsible for covalent crosslinking of phenolics in plant protein extracts to other proteins, rendering them useless most of the time.

Hi there,

I desperately need a reference paper regarding inhibiton of cysteine proteases by high concentration of the reducing agent 2-mercaptoethanol. I did go through the net but couldn't find any references.
