What are the factors have to be considered during the selection of probiotic bacteria for the commercial purposes?

Some factors to consider first off would be survival of bacteria through processing and having a compatible food system. Bifidobacteria is a common probiotic chosen with dairy products b/c it is tolerant to low pH. Also you have to consider conditions that will allow survival of probiotic in the intestine, again pH tolerance is important, bile resistance, possibly arsenic resistance.
