We evolved in a three-dimensional world, and were subject to predation. That's pretty strong incentive to develop a threat detection system whereby one would not only know of the presence of a threat, but also the direction it was coming from and how far away it was...

So, we have binocular vision because without it we would have no depth perception, and would not be able to adequately judge distance. We have two ears so we can discern the direction from which a sound is coming and two nostrils so we can assign a direction to a smell.
