and was wondering how the researchers studied the amyloid-beta protein with their NT2 cell culture. Did they transfect the cells to produce the protein or did they microinject the protein itself?

According to the text you linked to they used oxidative stress to induce amyloid-beta. NT2 cells express Abeta naturally and oxidative stress triggers the expression. Thus, they compared the base level of expression (without chitosan) to the level of Abeta expression in the presence of chitosan in order to determine chitosan's protective ability.
