It's a planning lab - I need to create the lab with just the variables stated and explained and a procedure. Any help would be appreciated!

Check out "Modern Experimental Biochemistry" by Rodney Boyer ISBN0-201-10131-9.

Its a bit old now but there are experients using lipase and milk that you should be able to adapt. Another useful methods book is Tietz "Clinical Chemistry."
