Lemon.... - the antioxidant ! (Feb/01/2010 )
we all know that lemons are recognized as usual antioxidants...n they might be used to protect against oxidation of foods...but my stupid question is:
why lemon juice get better taste when stored in fridge for a while ???
because it's cold then?

Apologies for nit picking but be careful how you define antioxidant. Most of the protection against browning in other foods comes from the acid denaturation/inhibition of oxidases rather than free radical adsorption.
Actually I never tried lemon juice...well, I tried hot lemon juice with honey, but only when I am sick, and I cannot tell you how it tastes, I just swallow as fast as possible!!
saying that it has a better taste is completely subjective imo. nevertheless, it depends on the drink you're mixing when the lemon juice is cold
