Lemon.... - the antioxidant ! (Feb/01/2010 )

we all know that lemons are recognized as usual antioxidants...n they might be used to protect against oxidation of foods...but my stupid question is:
why lemon juice get better taste when stored in fridge for a while ???

Apologies for nit picking but be careful how you define antioxidant. Most of the protection against browning in other foods comes from the acid denaturation/inhibition of oxidases rather than free radical adsorption.

Actually I never tried lemon juice...well, I tried hot lemon juice with honey, but only when I am sick, and I cannot tell you how it tastes, I just swallow as fast as possible!! :unsure:

saying that it has a better taste is completely subjective imo. nevertheless, it depends on the drink you're mixing when the lemon juice is cold :)
