What is with new members without a name, that are appearing regularly?

The user has made no posts yet, so I can't really delete him until he posts a topic that needs deletion or warning. But to answer your question, I can't say how these were created. I am only able to control posts.

Moreover, since it's Amanda Seyfried it's ok, but if it was Sarah Jessica Parker I would promptly delete it!

That is weird. Members without display name may have signed up using their Facebook account. Maybe a bug in the program.

It turns out to be an expected behavior. Those users are registered through their FB account but did not complete the registration process with BF and have not provided a display name. These incomplete registered users will be pruned in 3 days. So no worry.
