No idea, however, dietary fiber is usually considered to be long chain, indigestible (but not insoluble) sugars. So you could dissolve the food in water/buffer, digest out the short chain sugars (e.g use amylase) then measure what is left (HPLC??)

amylase won't work if the fiber is cellulose, but cellulase should work.
