How do fibronectin or collagen affect cell adhesion and motility? In other words, how do cells behave differently on fibronectin coating vs on collagen coating? I am interested in lamellipodia formation in Cos 7 or MEFs.

Different ECM molecules engage different integrins.  You could find out which integrins your cells express (just look it up based on the cell type). Then check which coating they bind to.  Then you can decide which one to use.
